    Ingredients

    • 4 pieces chicken breasts

    • 2 tablespoons olive oil

    • 1 cup cherry tomatoes

    • 2 cloves garlic

    • 1/4 cup basil leaves

    • 1/4 teaspoon dried oregano

    • 1/4 teaspoon salt

    • 1/4 teaspoon black pepper

    • 1 cup mozzarella cheese

    • 2 tablespoons balsamic vinegar

    Directions

    • Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius) to get it ready for baking the chicken.
    • Gently coat the chicken breasts with olive oil and season them with salt and black pepper evenly on both sides.
    • Place the seasoned chicken breasts in a baking dish ensuring they are not overlapping and bake for 20-25 minutes.
    • While the chicken is baking, dice the cherry tomatoes, chop the basil leaves, and mince the garlic cloves.
    • Combine the tomatoes, basil, garlic, oregano, balsamic vinegar, and mozzarella cheese in a bowl to create the bruschetta mixture.
    • After the chicken is done baking, carefully remove the baking dish from the oven using oven mitts.
    • Top the baked chicken evenly with the prepared bruschetta mixture ensuring the chicken is well covered.
    • Return the baking dish to the oven and bake for an additional 5 minutes or until the cheese has melted perfectly.
    • Remove the dish from the oven and allow the chicken to rest for a few minutes before serving it warm.
