Healthy Fact of the Day

Risotto, when prepared with moderation and balance, can be a delicious and comforting dish. This recipe offers the creamy goodness of Arborio rice, garlic, and Parmesan cheese.

Ingredients

  • 1 1/2 cups Arborio rice
  • 4 cups chicken or vegetable broth (low-sodium)
  • 1/2 cup dry white wine
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. In a saucepan, warm the chicken or vegetable broth over low heat. Keep it on low heat throughout the cooking process.
  2. In a large skillet or saucepan, heat the olive oil and 1 tablespoon of butter over medium heat.
  3. Add the minced garlic and sauté for about 1 minute until fragrant.
  4. Stir in the Arborio rice and cook for 1-2 minutes, ensuring the grains are well-coated with the oil and garlic.
  5. Pour in the dry white wine and cook for about 2 minutes, or until most of the liquid has been absorbed.
  6. Begin adding the warm broth, one ladleful at a time, and stir constantly. Allow the liquid to be mostly absorbed before adding more.
  7. Continue this process of adding broth and stirring until the Arborio rice is creamy and cooked to your desired level of tenderness (usually about 18-20 minutes).
  8. Stir in the grated Parmesan cheese and the remaining tablespoon of butter. Mix well.
  9. Season your Creamy Garlic Parmesan Risotto with salt and black pepper to taste.
  10. Garnish with fresh parsley if desired.
  11. Serve your Creamy Garlic Parmesan Risotto hot, as a rich and indulgent side dish or a satisfying main course.

Tip of the Day

“Always let your meat rest before slicing.”

Whether you're roasting a chicken, grilling steak, or baking pork tenderloin, letting cooked meat rest for 5–10 minutes before slicing allows the juices to redistribute evenly. This simple step keeps your meat juicy and tender, ensuring every bite is flavorful and moist. Bonus: It gives you a moment to plate your sides or garnish for a perfect presentation!

Pair your sandwich with a side salad or apple slices instead of fries, and choose water or unsweetened iced tea to keep your meal balanced.
