Creamy Classic Egg Salad

For perfectly cooked hard-boiled eggs, place them in cold water, bring to a boil, then remove from heat and let sit, covered, for 10 minutes before cooling in ice water.

Ingredients

 

  • 8 large eggs, hard-boiled and peeled
  • 1/3 cup mayonnaise
  • 1 tbsp Dijon mustard
  • 1/4 cup finely chopped celery
  • 2 tbsp finely chopped red onion
  • 1 tbsp fresh dill, chopped
  • 1 tsp apple cider vinegar
  • 1/4 tsp paprika
  • Salt and freshly ground black pepper to taste
  • Optional: 1 tbsp chopped chives for garnish

 

Instructions

  1. Chop the hard-boiled eggs into small pieces.

  2. In a medium bowl, mix mayonnaise, Dijon mustard, celery, red onion, dill, apple cider vinegar, and paprika.

  3. Gently fold in the chopped eggs.

  4. Season with salt and pepper to taste.

  5. Cover and refrigerate for at least 30 minutes to allow flavors to meld.

  6. Before serving, give it a gentle stir and adjust seasoning if needed.

  7. Garnish with chopped chives if desired.

  8. Serve on bread for sandwiches, on a bed of lettuce, or with crackers.
