3 packages cream cheese, softened
1 cup sugar
1/3 cup apple cider
1 teaspoon vanilla extract
3 large eggs
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
2 tablespoons all-purpose flour
Directions
- Preheat your oven to 325°F (160°C). Lightly grease a 9-inch springform pan and wrap the outside with aluminum foil.
- In a mixing bowl, combine the graham cracker crumbs and melted butter until well mixed. Press the mixture evenly into the bottom of the prepared pan.
- In a large bowl, beat the softened cream cheese and sugar until smooth and creamy. Add the apple cider and vanilla extract, mixing well.
- Add the eggs one at a time, beating after each addition until integrated. Stir in the ground cinnamon, nutmeg, and flour.
- Pour the cheesecake batter over the prepared crust. Tap the pan gently to release any air bubbles.
- Bake in preheated oven for about 60 minutes or until center is just set and the top appears slightly tan.
- Turn off the oven and leave the cheesecake inside with the door slightly ajar for about 1 hour to cool gradually.
- Remove from the oven and refrigerate the cheesecake for at least 4 hours or overnight to ensure it is fully set before serving.
