1.5 pounds ground beef
1 cup breadcrumbs
1 large egg
1 teaspoon salt
0.5 teaspoon black pepper
2 tablespoons olive oil
3 cups beef broth
2 large onions, thinly sliced
2 tablespoons butter
4 slices Swiss cheese
1 cup croutons
1 tablespoon Worcestershire sauce
Directions
- In a bowl, combine ground beef, breadcrumbs, egg, salt, and black pepper. Mix until ingredients are well combined.
- Shape the mixture into 1-inch meatballs using your hands and set them aside on a plate for a few minutes.
- Heat olive oil in a large skillet over medium heat and brown the meatballs on all sides. Do this in batches if necessary.
- Add butter to the crockpot and layer sliced onions on the bottom. Place the browned meatballs on top of the onions.
- Pour beef broth and Worcestershire sauce over the meatballs and onions and stir gently to combine the sauces.
- Cover the crockpot and cook on low for 4 to 5 hours, or until the meatballs are thoroughly cooked and flavors meld.
- During the last 15 minutes of cooking, top the meatballs with Swiss cheese slices and cover until cheese melts.
- Serve the meatballs hot, with a generous topping of croutons for added texture and flavor, if desired.
