Parmesan Crusted Baked Cod

Healthy Fact of the Day

Cod is a lean source of protein, rich in omega-3 fatty acids, which support heart health. For a healthier version, use whole wheat bread crumbs for extra fiber and bake instead of frying to keep it light while still achieving a crispy, golden crust.

This Parmesan Crusted Baked Cod transforms simple cod fillets into an elegant dinner with a golden, crispy coating that’s packed with Parmesan cheese, garlic, and aromatic herbs. The coating creates a delicious contrast to the tender, flaky fish beneath, while keeping the cod moist and perfectly seasoned. It’s an easy yet sophisticated dish that feels restaurant-quality but comes together effortlessly in your own kitchen.

If you love this crispy-crusted seafood, you’ll also enjoy our Crab and Shrimp Stuffed Salmon for another elegant fish dish with rich flavors. For more golden, crispy proteins, try our Seared Scallops with Spicy Cajun Cream Sauce or Easy and Juicy Huli Huli Chicken—both deliver that same satisfying contrast of textures and bold flavors.

    Ingredients

    • 1 cup Parmesan cheese, grated

    • 0.5 cup bread crumbs

    • 1 tablespoon parsley, chopped

    • 1 teaspoon garlic powder

    • 0.25 teaspoon salt

    • 0.25 teaspoon black pepper

    • 2 tablespoon olive oil

    • 4 fillets cod

    Directions

    • Preheat your oven to 400 degrees Fahrenheit and lightly grease a baking dish to prevent sticking.
    • In a bowl, mix together Parmesan cheese, bread crumbs, parsley, garlic powder, salt, and pepper to form a crust mixture.
    • Brush each cod fillet with olive oil to ensure that the crust sticks well to the surface.
    • Evenly coat the top of each cod fillet with the Parmesan mixture, pressing lightly to adhere.
    • Place the coated cod fillets in the prepared dish and bake in preheated oven for about 15-20 minutes.
    • Check if the fish flakes easily with a fork to determine doneness, then remove from the oven.
    • Let it cool slightly before serving, garnishing with additional parsley if desired.

    Tip of the Day

“Always let your meat rest before slicing.”

Whether you're roasting a chicken, grilling steak, or baking pork tenderloin, letting cooked meat rest for 5–10 minutes before slicing allows the juices to redistribute evenly. This simple step keeps your meat juicy and tender, ensuring every bite is flavorful and moist. Bonus: It gives you a moment to plate your sides or garnish for a perfect presentation!

The Stone Fruit Reckoning: What to Do With Too Many Peaches

Peaches and other stone fruits are significant dietary sources of several important nutrients that peak-season specimens provide in higher concentrations than their out-of-season counterparts. Peak-season peaches contain measurably higher levels of vitamin C, beta-carotene, and the flavonoid chlorogenic acid — a potent antioxidant associated with reduced inflammation and improved cardiovascular markers — than early-season or commercially ripened alternatives. The carotenoids that give ripe peaches their deep orange-gold color are fat-soluble, meaning that serving peaches with dairy fat — the cream, the yogurt, the butter used in a skillet preparation — significantly increases the absorption of these compounds compared to eating the fruit alone.
