Roasted Beet and Goat Cheese Salad

Beets are an excellent source of folate, manganese, potassium, and vitamin C. They also contain betalains, which are powerful plant pigments with antioxidant and anti-inflammatory properties.

Ingredients

 

  • 4 medium beets, peeled and diced into 1-inch cubes
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 6 cups mixed greens
  • 1/2 cup crumbled goat cheese
  • 1/4 cup toasted walnuts
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey

 

Instructions

 

  1. Preheat your oven to 400°F (200°C).
  2. Toss the diced beets with olive oil, salt, and pepper on a baking sheet.
  3. Roast the beets in the preheated oven for 25-30 minutes, or until they are tender and slightly caramelized.
  4. In a large salad bowl, combine the mixed greens, roasted beets, crumbled goat cheese, and toasted walnuts.
  5. In a small bowl, whisk together the balsamic vinegar and honey to make a simple vinaigrette.
  6. Drizzle the balsamic vinaigrette over the salad and toss gently to combine.
  7. Season with additional salt and pepper to taste, if desired.
