Easy Cheesy 2-Minute Noodles

Whole-grain noodles offer more fiber and nutrients than regular noodles, and this Easy Cheesy 2-Minute Noodles recipe is not only quick but also customizable with your favorite veggies for added nutrition.

Ingredients

 

  • 2 packs whole-grain instant noodles
  • 1 cup mixed vegetables (broccoli, carrots, peas)
  • 1/2 cup shredded cheddar cheese
  • 2 tablespoons butter
  • Salt and black pepper to taste
  • Fresh herbs (parsley or chives) for garnish (optional)

 

Instructions

 

  1. Bring a pot of water to a boil.

  2. Add the whole-grain instant noodles and mixed vegetables. Cook for 2 minutes or according to the package instructions.

  3. Drain the noodles and vegetables, reserving a small amount of cooking water.

  4. In the same pot, add butter and let it melt.

  5. Return the drained noodles and vegetables to the pot.

  6. Add shredded cheddar cheese to the noodles and stir until the cheese is melted and coats the noodles.

  7. If needed, add a small amount of reserved cooking water to achieve your desired consistency.

  8. Season with salt and black pepper to taste.

  9. Garnish with fresh herbs like parsley or chives if desired.
