Ingredients

 

  • 2 lbs russet potatoes, peeled and quartered
  • 1/4 cup milk
  • 2 tbsp butter
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs, beaten (divided use)
  • 1/4 cup finely chopped fresh chives
  • 1/4 cup finely chopped fresh parsley
  • 1/2 tsp garlic powder
  • Salt and freshly ground black pepper to taste
  • 1 cup all-purpose flour
  • 2 cups breadcrumbs
  • Vegetable oil for frying
  • Lemon wedges for serving (optional)
  • Aioli or sour cream for dipping (optional)

Instructions

  1. Boil potatoes in salted water until tender, about 15-20 minutes. Drain well.

  2. Mash potatoes with milk and butter until smooth.

  3. Stir in Parmesan cheese, 1 beaten egg, chives, parsley, garlic powder, salt, and pepper.

  4. Let mixture cool in the refrigerator for at least 30 minutes.

  5. Shape the potato mixture into small cylinders, about 2 inches long.

  6. Set up a breading station: flour in one bowl, remaining beaten egg in another, and breadcrumbs in a third.

  7. Dip each croquette in flour, then egg, then coat with breadcrumbs.

  8. Place breaded croquettes on a baking sheet and refrigerate for 15 minutes.

  9. Heat oil in a deep fryer or heavy-bottomed pot to 350°F (175°C).

  10. Fry croquettes in batches until golden brown, about 2-3 minutes.

  11. Drain on paper towels and season with salt while still hot.

  12. Serve warm with lemon wedges and aioli or sour cream for dipping, if desired.
