Mushroom Flatbread with White Miso

Ingredients

 

  • 1 lb store-bought pizza dough
  • 1 lb mixed mushrooms (shiitake, cremini, oyster), sliced
  • 3 tbsp olive oil, divided
  • 2 tbsp white miso paste
  • 2 tbsp unsalted butter, softened
  • 2 cloves garlic, minced
  • 1 tbsp fresh thyme leaves
  • 1/4 cup grated Parmesan cheese
  • 2 oz goat cheese, crumbled
  • 2 tbsp chopped fresh chives
  • 1 tsp sesame seeds
  • Salt and freshly ground black pepper to taste
  • Red pepper flakes to taste (optional)

Instructions

  1. Preheat oven to 450°F (230°C) with a baking stone or sheet inside.

  2. In a large skillet, heat 2 tbsp olive oil over medium-high heat.

  3. Add mushrooms and cook until golden and tender, about 8-10 minutes. Set aside.

  4. In a small bowl, mix white miso paste with softened butter until smooth.

  5. Roll out pizza dough on a floured surface into a large oval or rectangle.

  6. Transfer dough to a piece of parchment paper.

  7. Spread the miso-butter mixture evenly over the dough, leaving a small border.

  8. Top with cooked mushrooms, minced garlic, and thyme leaves.

  9. Sprinkle Parmesan cheese over the mushrooms.

  10. Carefully slide the parchment with flatbread onto the hot baking stone or sheet.

  11. Bake for 12-15 minutes, until crust is golden and crispy.

  12. Remove from oven and top with crumbled goat cheese.

  13. Drizzle with remaining 1 tbsp olive oil.

  14. Sprinkle with chives, sesame seeds, and red pepper flakes if using.

  15. Cut into slices and serve immediately.
