Pizza Puff Pastry Tarts

Ingredients

 

  • 1 package (17.3 oz) frozen puff pastry, thawed
  • 1 cup marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup mini pepperoni slices
  • 1/4 cup finely diced bell peppers (mix of red and green)
  • 1/4 cup finely diced red onion
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 large egg, beaten (for egg wash)
  • 2 tablespoons fresh basil leaves, thinly sliced (for garnish)
  • Olive oil, for drizzling
  • Salt and freshly ground black pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and line two baking sheets with parchment paper.

  2. Unfold the puff pastry sheets and cut each into 9 equal squares.

  3. Using a knife, score a border about 1/2 inch from the edge of each square, being careful not to cut all the way through.

  4. Place the squares on the prepared baking sheets.

  5. Spread a tablespoon of marinara sauce inside the border of each square.

  6. In a bowl, mix together mozzarella, Parmesan, pepperoni, bell peppers, red onion, oregano, dried basil, and red pepper flakes.

  7. Divide the cheese mixture evenly among the pastry squares, staying within the borders.

  8. Brush the borders with beaten egg.

  9. Bake for 15-18 minutes, or until the pastry is puffed and golden brown.

  10. Remove from oven and let cool for 5 minutes.

  11. Drizzle with a little olive oil and sprinkle with fresh basil.

  12. Season with salt and pepper to taste.

  13. Serve warm and enjoy your mini pizza tarts!
