Refreshing Watermelon Salsa

Ingredients

 

  • 4 cups seedless watermelon, diced
  • 1 English cucumber, diced
  • 1/2 red onion, finely chopped
  • 1 jalapeño pepper, seeded and minced
  • 1/4 cup fresh mint leaves, chopped
  • 1/4 cup fresh basil leaves, chopped
  • 1 lime, juiced
  • 1 tbsp honey
  • Salt and freshly ground black pepper to taste
  • Tortilla chips or pita chips for serving

 

Instructions

  1. In a large bowl, combine the diced watermelon, cucumber, red onion, and minced jalapeño pepper.
  2. Add the chopped mint leaves, basil leaves, lime juice, and honey to the bowl. Gently toss the ingredients together until well combined.
  3. Season the salsa with salt and freshly ground black pepper to taste.
  4. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld together.
  5. Before serving, give the watermelon salsa a quick stir and taste, adjusting the seasoning if needed.
  6. Serve the refreshing watermelon salsa chilled with tortilla chips or pita chips for scooping.
