Ham and Cheese Tortellini

Tortellini is a good source of complex carbohydrates, which provide sustained energy throughout the day. The addition of ham and cheese also contributes to a balanced meal with protein.

Ingredients

 

  • 1 package (20 oz) refrigerated cheese tortellini
  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup diced ham
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • Salt and black pepper, to taste

 

Instructions

  1. Cook the tortellini according to package instructions until al dente. Drain and set aside.

  2. In a large skillet, heat the olive oil over medium heat. Add the onion and sauté for 2-3 minutes until translucent.

  3. Add the garlic and diced ham, and cook for another minute, stirring frequently.

  4. Pour in the heavy cream and bring the mixture to a gentle simmer.

  5. Add the cooked tortellini and Parmesan cheese, and toss gently to coat the tortellini in the creamy sauce.

  6. Remove from heat and stir in the chopped parsley.

  7. Season with salt and black pepper to taste.

  8. Serve hot, garnished with additional Parmesan cheese and parsley, if desired.
