    Ingredients

    • 1 tablespoon olive oil

    • 1 cup onion, chopped

    • 2 cloves garlic, minced

    • 1 cup bell pepper, chopped

    • 2 cups vegetable broth

    • 14.5 ounce canned tomatoes, diced

    • 15 ounce canned kidney beans, drained and rinsed

    • 15 ounce canned black beans, drained and rinsed

    • 2 tablespoons chili powder

    • 1 teaspoon smoked paprika

    • 1 teaspoon cumin

    • 8 ounces elbow macaroni

    Directions

    • In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3 minutes.
    • Add the minced garlic and chopped bell pepper to the pot. Stir and cook for an additional 2 minutes until fragrant.
    • Pour in the vegetable broth, diced tomatoes, kidney beans, and black beans. Stir in the chili powder, smoked paprika, and cumin.
    • Bring the mixture to a boil over high heat, then reduce the heat to medium-low and maintain a simmer.
    • Add the elbow macaroni to the pot and stir. Cover and let it cook for about 10 minutes until pasta is tender.
    • Season with salt and pepper to taste, stirring occasionally, and ensure everything is well combined before serving.
