    Ingredients

    • 3 pounds beef short ribs

    • 2 tablespoons olive oil

    • 1 unit large onion, chopped

    • 3 cloves garlic, minced

    • 2 cups red wine

    • 1 can 28 ounces diced tomatoes

    • 1 cup beef broth

    • 2 tablespoons tomato paste

    • 1 teaspoon dried thyme

    • 1 teaspoon dried rosemary

    • 2 pounds potatoes, peeled and cubed

    • 0.5 cup milk

    • 0.5 cup Parmesan cheese, grated

    Directions

    • Preheat oven to 325°F (165°C). Season short ribs with salt and pepper, then brown them in olive oil in a large oven-safe pot.
    • Remove ribs and sauté onion and garlic in the same pot until tender. Add red wine, diced tomatoes, beef broth, tomato paste, thyme, and rosemary.
    • Return ribs to the pot, bring to a simmer, cover, and transfer to the oven. Cook for about 4 hours until the meat is tender.
    • While the ragu is cooking, boil potatoes in a large pot until tender. Drain and mash with milk and Parmesan cheese until smooth.
    • Season the mashed potatoes with salt and pepper to taste. Once the ragu is ready, serve it over the Parmesan mashed potatoes.
