1 pound ground beef
0.5 cup breadcrumbs
1 large egg
2 cloves garlic, minced
1 teaspoon Italian seasoning
2 tablespoons olive oil
4 cups mashed potatoes
1 cup shredded cheddar cheese
0.5 teaspoon salt
0.5 teaspoon black pepper
Directions
- Preheat the oven to 375°F (190°C) and lightly grease a baking dish with olive oil. Set aside for later use.
- In a bowl, combine ground beef, breadcrumbs, egg, garlic, Italian seasoning, salt, and pepper. Mix until well combined.
- Form the mixture into small meatballs, about 1 inch in diameter, and place them evenly in the prepared baking dish.
- Drizzle olive oil over the meatballs and bake in the preheated oven for 15 minutes to partially cook the meatballs.
- While meatballs are baking, prepare the mashed potatoes by reheating if necessary, adding a splash of milk for creaminess.
- Remove the meatballs from the oven and spread the mashed potatoes evenly on top of the meatballs in the baking dish.
- Sprinkle shredded cheddar cheese over the mashed potato layer, covering the surface generously for a cheesy finish.
- Return the dish to the oven and bake for another 20-25 minutes, or until cheese is golden and bubbly.
- Allow the dish to cool slightly before serving, ensuring the internal temperature is safe for consumption.
