1 lb Italian sausage
12 oz rigatoni pasta
2 tbsp olive oil
1 large onion, chopped
2 cloves garlic, minced
14.5 oz can of diced tomatoes
0.5 cup grated Parmesan cheese
1 tsp Italian seasoning
0.25 tsp red pepper flakes
to taste salt and pepper
1 tbsp fresh basil, chopped
Directions
- Cook the rigatoni pasta according to the package instructions in a large pot of boiling salted water until al dente, then drain and set aside.
- In a large skillet, heat olive oil over medium heat and sauté the chopped onion until translucent, about 5 minutes.
- Add the minced garlic to the skillet and cook for another minute until fragrant, being careful not to burn it.
- Remove the sausage from its casing and add to the skillet, breaking it apart with a spoon and cook until browned and cooked through.
- Pour the diced tomatoes into the skillet with the cooked sausage, along with Italian seasoning and red pepper flakes, stirring well to combine.
- Let the sauce simmer for 5-10 minutes to allow the flavors to meld together, stirring occasionally.
- Add the drained pasta to the skillet with the sausage and tomato mixture, tossing until well combined.
- Stir in the grated Parmesan cheese, then season with salt and pepper to taste.
- Remove from heat and sprinkle with fresh basil before serving hot.
