3 cups beef broth
1 cup heavy cream
2 tablespoons flour
2 cups baby potatoes, quartered
1 cup carrots, sliced
1 cup peas
0.25 cup fresh parsley, chopped
Directions
- In a bowl, mix the ground beef with bread crumbs, onion, salt, pepper, and allspice. Form small meatballs using about a tablespoon of mixture for each.
- In a large pot, melt butter over medium heat. Add meatballs in batches and brown them on all sides, about 5 minutes per batch, then remove and set aside.
- In the same pot, whisk in flour and gradually add beef broth, stirring constantly to prevent lumps. Bring mixture to a gentle boil and allow to simmer.
- Add heavy cream to the broth and mix thoroughly. Return the browned meatballs to the pot, along with the baby potatoes and sliced carrots.
- Simmer the soup until the potatoes and carrots are tender, about 20 minutes. Stir occasionally to ensure even cooking throughout.
- Add peas to the soup and continue simmering for an additional 5 minutes. Stir in fresh parsley just before serving for added flavor and color.
