  • 1/4 teaspoon garlic powder

  • 8 slices sourdough bread
  • 2 cups shredded sharp cheddar cheese
  • 2 medium tomatoes, sliced
  • 2 tablespoons butter, softened
  • Optional: sliced pickles for serving

Instructions

  1. In a medium bowl, mix tuna, mayonnaise, red onion, jalapeños, lime juice, Dijon mustard, and garlic powder.

  2. Season the tuna mixture with salt and pepper to taste.

  3. Lay out 4 slices of sourdough bread on a clean surface.

  4. Divide the tuna mixture evenly among the 4 slices of bread, spreading it to the edges.

  5. Top each with tomato slices and a generous amount of shredded cheddar cheese.

  6. Cover with the remaining 4 slices of bread to form sandwiches.

  7. Spread the outside of each sandwich with softened butter.

  8. Heat a large skillet or griddle over medium heat.

  9. Place the sandwiches in the skillet and cook for 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.

  10. If needed, cover the skillet with a lid to help the cheese melt completely.

  11. Remove from heat and let cool for a minute before slicing diagonally.

  12. Serve immediately with pickle slices on the side if desired.
