Spicy Jalapeño Cheddar Tuna Melt

Healthy Fact of the Day

While indulgent, this Spicy Jalapeño Cheddar Tuna Melt offers some nutritional benefits. Tuna is an excellent source of lean protein and omega-3 fatty acids, which are essential for heart and brain health. Jalapeños contain capsaicin, known for its metabolism-boosting properties and potential pain-relieving effects. The cheese provides calcium for bone health, while the sourdough bread offers complex carbohydrates and may be easier to digest than other breads due to its fermentation process. To make this sandwich healthier, consider using whole grain bread, reducing the amount of cheese, or opting for a low-fat mayonnaise. Enjoy this sandwich as an occasional treat as part of a balanced diet.

Ingredients

  • 2 cans (5 oz each) solid white tuna in water, drained
  • 1/4 cup mayonnaise
  • 1/4 cup finely diced red onion
  • 2 jalapeños, seeded and finely chopped
  • 1 tablespoon fresh lime juice
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon garlic powder
  • Salt and freshly ground black pepper to taste
  • 8 slices sourdough bread
  • 2 cups shredded sharp cheddar cheese
  • 2 medium tomatoes, sliced
  • 2 tablespoons butter, softened
  • Optional: sliced pickles for serving

Instructions

  1. In a medium bowl, mix tuna, mayonnaise, red onion, jalapeños, lime juice, Dijon mustard, and garlic powder.

  2. Season the tuna mixture with salt and pepper to taste.

  3. Lay out 4 slices of sourdough bread on a clean surface.

  4. Divide the tuna mixture evenly among the 4 slices of bread, spreading it to the edges.

  5. Top each with tomato slices and a generous amount of shredded cheddar cheese.

  6. Cover with the remaining 4 slices of bread to form sandwiches.

  7. Spread the outside of each sandwich with softened butter.

  8. Heat a large skillet or griddle over medium heat.

  9. Place the sandwiches in the skillet and cook for 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.

  10. If needed, cover the skillet with a lid to help the cheese melt completely.

  11. Remove from heat and let cool for a minute before slicing diagonally.

  12. Serve immediately with pickle slices on the side if desired.

Tip of the Day

“Always let your meat rest before slicing.”

Whether you're roasting a chicken, grilling steak, or baking pork tenderloin, letting cooked meat rest for 5–10 minutes before slicing allows the juices to redistribute evenly. This simple step keeps your meat juicy and tender, ensuring every bite is flavorful and moist. Bonus: It gives you a moment to plate your sides or garnish for a perfect presentation!

The Reason Your Meatballs Fall Apart When You Cook Them

Using 80/20 ground meat for meatballs creates more satisfying portions that keep you full longer compared to dry, lean versions that require extra sauce or cheese to be palatable, and the fat in properly made meatballs helps absorb fat-soluble vitamins from accompanying tomato sauce while the protein and fat combination supports stable blood sugar better than very lean options that leave you hungry soon after eating.
