    • 1 pound shrimp, peeled and deveined

    • 2 cups water

    • 1 cup stone-ground grits

    • 2 cups milk

    • 1/2 teaspoon salt

    • 1/4 teaspoon black pepper

    • 2 cups sharp cheddar cheese, shredded

    • 4 tablespoons butter, divided

    • 1 medium onion, chopped

    • 2 cloves garlic, minced

    • 1 tablespoon hot sauce

    • 1/2 teaspoon paprika

    Directions

    • Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or non-stick spray.
    • In a large saucepan, bring 2 cups of water and 2 cups of milk to a boil over medium heat.
    • Gradually whisk in the stone-ground grits and reduce the heat to low. Cook, stirring often until thickened.
    • Stir in salt, black pepper, and 1 cup of the cheddar cheese until melted and combined evenly.
    • In a skillet, melt 2 tablespoons of butter over medium heat. Add chopped onion and cook until translucent.
    • Add minced garlic to the skillet and sauté for about 1-2 minutes until fragrant but not browned.
    • Stir the cooked onion and garlic into the grits mixture, then transfer everything to the prepared baking dish.
    • In the same skillet, melt the remaining 2 tablespoons of butter and add the shrimp. Cook until they turn pink.
    • Season the shrimp with hot sauce and paprika, then arrange them over the grits in the baking dish.
    • Top with the remaining cup of cheddar cheese, spreading it evenly across the surface of the casserole.
    • Bake in the preheated oven until the casserole is bubbly and the top is golden for about 30 minutes.
    • Allow the casserole to cool slightly before serving to help it set and make cutting easier.
