Potato-Skin-Bites

Potato Skin Bites

Healthy Fact of the Day

While indulgent, potato skins contain some nutritional benefits. Potatoes provide vitamin C, potassium, and fiber when eaten with their skins. To make healthier, use turkey bacon or lean Canadian bacon. Consider reduced-fat cheese and Greek yogurt instead of sour cream. The green onions add flavor and nutrients with minimal calories. Keep the potato pulp in for more fiber and nutrients, just making a small well for toppings. For a lighter version, try topping with roasted vegetables and a sprinkle of cheese. While tasty, these are best enjoyed in moderation. Balance by serving alongside a fresh salad or vegetable crudités.

Ingredients

  • 24 baby potatoes (red or gold)
  • 8 slices bacon, crumbled
  • 1 1/2 cups sharp cheddar cheese, shredded
  • 1/4 cup sour cream
  • 3 green onions, finely chopped
  • 2 tbsp butter, melted
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • Salt and black pepper to taste

For garnish:

  • Extra sour cream
  • Reserved bacon crumbles
  • Chopped green onions
  • Chives
  • Red pepper flakes (optional)
  • For dipping:
  • Ranch dressing
  • Chipotle aioli
  • Sour cream

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Wash potatoes and pat dry.
  3. Toss potatoes with olive oil, salt, and pepper.
  4. Bake for 25-30 minutes until tender.
  5. Let cool slightly, then halve each potato.
  6. Scoop out centers leaving a small rim of potato.
  7. Mix melted butter with garlic powder and paprika.
  8. Brush potato skins with seasoned butter.
  9. Return to oven for 10 minutes until crispy.
  10. Fill each skin with cheese and bacon.

  12. Top with sour cream, green onions, and extra bacon.

Tip of the Day

“Always let your meat rest before slicing.”

Whether you're roasting a chicken, grilling steak, or baking pork tenderloin, letting cooked meat rest for 5–10 minutes before slicing allows the juices to redistribute evenly. This simple step keeps your meat juicy and tender, ensuring every bite is flavorful and moist. Bonus: It gives you a moment to plate your sides or garnish for a perfect presentation!

Coffee contains antioxidants and may support cognitive function and alertness. Mascarpone, while rich, provides calcium and protein. The coffee-soaking technique allows you to infuse intense flavor without excessive sweetness—the bold coffee and cocoa balance the sweet cream beautifully. When desserts have complex, satisfying flavors like these cupcakes, smaller portions often feel more rewarding than larger servings of milder desserts.

Today Is a Double-Deal Day at Shake Shack — Two Free Items, Two Codes

If you’re taking advantage of both Shake Shack deals today, consider splitting one of the burgers with someone rather than eating both back-to-back.
