Mediterranean-Style Zucchini Fritters

Mediterranean-Style Zucchini Fritters are a nutritious and delicious way to enjoy the goodness of vegetables. Packed with zucchini, tomatoes, and herbs, and served with a refreshing tzatziki dipping sauce, these fritters offer a taste of the Mediterranean with a healthy twist.

Ingredients

 

For the Zucchini Fritters:

  • 2 medium zucchini, grated
  • 1 medium tomato, seeded and diced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 2 green onions, finely chopped
  • 1/2 cup whole wheat flour
  • 2 large eggs
  • 1 teaspoon baking powder
  • Salt and black pepper to taste
  • Olive oil for frying

 

For the Tzatziki Dipping Sauce:

  • 1/2 cup Greek yogurt
  • 1/4 cucumber, grated and squeezed to remove excess moisture
  • 1 clove garlic, minced
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon lemon juice
  • Salt and black pepper to taste

Instructions

 

  1. Grate the zucchini and place it in a clean kitchen towel. Squeeze out excess moisture from the zucchini.

  2. In a large bowl, combine the grated zucchini, diced tomato, crumbled feta cheese, chopped parsley, chopped mint, and finely chopped green onions.

  3. In a separate bowl, whisk together whole wheat flour, eggs, baking powder, salt, and black pepper.

  4. Add the flour mixture to the zucchini mixture and stir until well combined.

  5. Heat olive oil in a skillet over medium heat.

  6. Spoon the zucchini mixture into the skillet to form fritters. Cook for 3-4 minutes on each side or until golden brown.

  7. While the fritters are cooking, prepare the tzatziki dipping sauce. In a small bowl, combine Greek yogurt, grated cucumber, minced garlic, chopped dill, lemon juice, salt, and black pepper.

  8. Serve the Mediterranean-Style Zucchini Fritters hot with a side of tzatziki dipping sauce.
