    • 1 cup milk

    • 2 tablespoons butter

    • 2 tablespoons olive oil

    • 200 grams mushrooms

    • 1 clove garlic

    • 1 teaspoon salt

    • 0.25 cup Parmesan cheese

    • 1 tablespoon fresh parsley

    Directions

    • Bring 4 cups of water to a boil in a large saucepan. Once boiling, reduce heat to low and gradually whisk in the polenta.
    • Continue to stir the polenta frequently, ensuring it does not stick to the pan, for about 30 minutes or until it’s thick and creamy.
    • While the polenta is cooking, clean and slice the mushrooms. Finely chop the garlic for the mushroom mixture.
    • In a skillet over medium heat, heat the olive oil and butter until melted. Add the garlic and sauté for about 1 minute.
    • Add the sliced mushrooms to the skillet and cook for about 8-10 minutes, or until they are golden and tender.
    • Season the mushrooms with salt and black pepper, then stir in freshly chopped parsley before removing from heat.
    • Once the polenta is ready, stir in milk and Parmesan cheese until fully incorporated and creamy.
    • Serve the creamy polenta on plates, topped generously with the sautéed mushrooms. Garnish with additional Parmesan and parsley if desired.
