Ingredients



  • 1 tablespoon 1 olive oil

  • 1/2 cup 1/2 chopped onion

  • 2 cloves 2 garlic, minced

  • 2 medium 2 carrots, sliced

  • 2 stalks 2 celery, chopped

  • 4 cups 4 low-sodium chicken broth

  • 1 cup 1 water

  • 1/2 teaspoon 1/2 dried thyme

  • 4 ounces 4 egg noodles, uncooked

  • 1 pound 1 cooked chicken breast, shredded

  • 1/2 teaspoon 1/2 salt

  • 1/4 teaspoon 1/4 black pepper

  • 2 tablespoons 2 fresh parsley, chopped

Directions

  • Heat olive oil in a large pot over medium heat, add chopped onion and garlic, and sauté until onion is translucent, about 5 minutes.
  • Add sliced carrots and chopped celery, and cook for another 5 minutes until vegetables start to soften.
  • Pour in chicken broth and water, then add dried thyme. Bring the mixture to a boil over high heat.
  • Reduce heat to medium-low and add egg noodles, cooking uncovered until noodles are tender, approximately 8 to 10 minutes.
  • Stir in cooked chicken and season with salt and black pepper. Simmer for another 5 minutes to heat through.
  • Garnish with fresh chopped parsley before serving and enjoy your warm, comforting soup.
