Ingredients

1 tablespoon 1 olive oil

1/2 cup 1/2 chopped onion

2 cloves 2 garlic, minced

2 medium 2 carrots, sliced

2 stalks 2 celery, chopped

4 cups 4 low-sodium chicken broth

1 cup 1 water

1/2 teaspoon 1/2 dried thyme

4 ounces 4 egg noodles, uncooked

1 pound 1 cooked chicken breast, shredded

1/2 teaspoon 1/2 salt

1/4 teaspoon 1/4 black pepper

2 tablespoons 2 fresh parsley, chopped
Directions
- Heat olive oil in a large pot over medium heat, add chopped onion and garlic, and sauté until onion is translucent, about 5 minutes.
- Add sliced carrots and chopped celery, and cook for another 5 minutes until vegetables start to soften.
- Pour in chicken broth and water, then add dried thyme. Bring the mixture to a boil over high heat.
- Reduce heat to medium-low and add egg noodles, cooking uncovered until noodles are tender, approximately 8 to 10 minutes.
- Stir in cooked chicken and season with salt and black pepper. Simmer for another 5 minutes to heat through.
- Garnish with fresh chopped parsley before serving and enjoy your warm, comforting soup.
