Gnocchi with Pomodoro Sauce

Healthy Fact of the Day

Gnocchi with Pomodoro Sauce offers some nutritional benefits when enjoyed as part of a balanced diet. Potatoes in the gnocchi provide vitamin C and potassium. Tomatoes in the sauce are rich in lycopene, an antioxidant linked to various health benefits, including reduced risk of heart disease and certain cancers. To make this dish healthier, consider using whole wheat flour for added fiber, reducing the amount of Parmesan cheese, or adding vegetables like spinach or zucchini to the sauce. While delicious, this dish is calorie-dense, so portion control is important.

Ingredients

For the gnocchi:

  • 2 lbs russet potatoes
  • 1 1/2 cups all-purpose flour, plus more for dusting
  • 1 large egg, lightly beaten
  • 1 tsp salt
  • 1/4 tsp freshly ground black pepper

For the Pomodoro sauce:

  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 (28 oz) can San
  • Marzano whole peeled tomatoes
  • 1/4 cup fresh basil leaves, torn
  • 1 tsp sugar
  • Salt and freshly ground black pepper to taste
  • 1/4 cup grated Parmesan cheese, plus more for serving
  • 2 tbsp unsalted butter

Instructions

  1. For the gnocchi, boil potatoes until tender. Drain, peel, and mash while still hot.

  2. On a clean surface, make a mound with the mashed potatoes. Create a well in the center.

  3. Add flour, egg, salt, and pepper to the well.

  4. Gently knead until a soft dough forms.

  5. Divide dough into 4 parts. Roll each part into a rope about 1/2 inch thick.

  6. Cut ropes into 1-inch pieces. Press each piece with a fork to create ridges.

  7. Bring a large pot of salted water to a boil.

  8. For the sauce, heat olive oil in a large skillet over medium heat.

  9. Add minced garlic and cook until fragrant, about 1 minute.

  10. Crush tomatoes by hand and add to the skillet with their juices.

  11. Add torn basil, sugar, salt, and pepper. Simmer for 20 minutes.

  12. Cook gnocchi in batches in the boiling water until they float to the surface (2-3 minutes).

  13. Remove gnocchi with a slotted spoon and add directly to the sauce.

  14. Gently toss gnocchi with the sauce, adding Parmesan and butter.

  15. Cook for an additional 1-2 minutes until gnocchi are coated and sauce is creamy.

  16. Serve hot, garnished with additional Parmesan and fresh basil leaves.

Tip of the Day

“Always let your meat rest before slicing.”

Whether you're roasting a chicken, grilling steak, or baking pork tenderloin, letting cooked meat rest for 5–10 minutes before slicing allows the juices to redistribute evenly. This simple step keeps your meat juicy and tender, ensuring every bite is flavorful and moist. Bonus: It gives you a moment to plate your sides or garnish for a perfect presentation!

The Bread Baker’s Year: What Happens When You Make It Every Week

Long-fermented sourdough bread has measurably different effects on blood sugar than conventionally leavened bread made from the same flour. The organic acids produced during sourdough fermentation — lactic and acetic acid — slow the digestion of starches and lower the glycemic response of the finished bread compared to bread made with commercial yeast. Additionally, the extended fermentation degrades phytic acid in the grain, improving the bioavailability of minerals including iron, zinc, and magnesium. The health benefits of genuine sourdough bread — as opposed to bread marketed as sourdough but made with commercial yeast and added acid — are a direct product of the long, genuine fermentation process that the practice of weekly bread baking produces.

Using a combination of mayonnaise and sour cream rather than mayonnaise alone reduces the fat content of the dressing while adding protein and probiotics from the sour cream—a small swap that keeps the flavor rich and the nutrition balanced.
