    • 1 pound boneless chicken breasts

    • 4 cups chicken broth

    • 2 cups diced potatoes

    • 1 cup sliced carrots

    • 1 cup diced onions

    • 3 cloves garlic, minced

    • 1 teaspoon dried thyme

    • 1 teaspoon dried rosemary

    • 1 teaspoon salt

    • 0.5 teaspoon black pepper

    • 2 tablespoons olive oil

    • 2 tablespoons cornstarch

    • 0.25 cup cold water

    Directions

    • Heat olive oil in a pan over medium heat. Sear chicken breasts on both sides until golden brown, about 5 minutes per side.
    • Add chicken to the crockpot along with chicken broth, potatoes, carrots, onions, garlic, thyme, rosemary, salt, and black pepper.
    • Cover and cook on low for 6 hours or until chicken is cooked through and vegetables are tender.
    • Remove chicken from the crockpot and shred it using two forks. Return shredded chicken to the crockpot.
    • In a small bowl, whisk together cornstarch and cold water until smooth. Stir into the stew to thicken.
    • Continue to cook on high for 30 minutes. Stir well before serving to combine flavors.
