Crispy Chicken Parmesan

Ingredients

 

  • 4 chicken breasts, pounded thin
  • 2 cups Italian-seasoned breadcrumbs
  • 1 cup panko breadcrumbs
  • 1 cup all-purpose flour
  • 3 large eggs, beaten
  • 2 cups marinara sauce
  • 2 cups mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, freshly grated
  • 4 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp red pepper flakes
  • Salt and black pepper to taste
  • Fresh basil leaves for garnish

Instructions

  1. Preheat oven to 425°F (220°C).

  2. Set up breading station: flour, beaten eggs, and mixed breadcrumbs with seasonings.

  3. Season chicken with salt and pepper.

  4. Dredge each piece in flour, then egg, then breadcrumb mixture.

  5. Heat olive oil in large oven-safe skillet over medium-high heat.

  6. Cook chicken 4-5 minutes per side until golden brown.

  7. Top each piece with marinara sauce.

  8. Layer with mozzarella and Parmesan.

  9. Transfer skillet to oven.

  10. Bake 10-12 minutes until cheese is bubbly and golden.

  11. Let rest 5 minutes.

  12. Garnish with fresh basil before serving.
