Chicken Broccoli Casserole with Cheesy Cauliflower Rice is a nutritious and satisfying dish that offers the comfort of a casserole with a healthy twist. The cauliflower rice provides a low-carb alternative to traditional rice, making this recipe a wholesome option for a delicious dinner.

Ingredients

 

For the Cheesy Cauliflower Rice:

  • 1 large head cauliflower, grated or processed into rice
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste

 

For the Chicken Broccoli Mixture:

  • 1 lb boneless, skinless chicken breasts, cooked and shredded
  • 2 cups broccoli florets, blanched
  • 1 cup plain Greek yogurt
  • 1/2 cup mayonnaise
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon onion powder
  • Salt and black pepper to taste

Instructions

 

For the Cheesy Cauliflower Rice:

  1. Preheat your oven to 400°F (200°C).

  2. Grate or process the cauliflower into rice-sized pieces.

  3. In a large bowl, combine cauliflower rice, shredded cheddar cheese, grated Parmesan cheese, garlic powder, salt, and black pepper.

  4. Mix well until the cheeses are evenly distributed.

  5. Spread the cheesy cauliflower rice mixture in an even layer on a baking sheet lined with parchment paper.

  6. Bake in the preheated oven for 15-20 minutes or until the edges are golden and the cheese is melted.

  7. Remove from the oven and set aside.

 

For the Chicken Broccoli Mixture:

  1. In a large bowl, combine shredded chicken, blanched broccoli florets, Greek yogurt, mayonnaise, shredded cheddar cheese, grated Parmesan cheese, minced garlic, onion powder, salt, and black pepper.
  2. Mix until all the ingredients are well combined.

 

Assembling the Casserole:

  1. Reduce the oven temperature to 350°F (175°C).
  2. In a casserole dish, layer half of the cheesy cauliflower rice at the bottom.

  3. Top with the chicken broccoli mixture, spreading it evenly.

  4. Cover the chicken broccoli mixture with the remaining cheesy cauliflower rice.

  5. Bake in the oven for 25-30 minutes or until the casserole is hot and bubbly.

  6. Let it cool for a few minutes before serving.
