    • 2 cups corn kernels

    • 1 tablespoon vegetable oil

    • 1 cup cotija cheese

    • 1/4 cup mayonnaise

    • 2 tablespoons lime juice

    • 1 teaspoon chili powder

    • 8 small tortillas

    • 1/4 cup cilantro, chopped

    • 1/4 teaspoon salt

    • 1/4 teaspoon black pepper

    Directions

    • Heat the vegetable oil in a skillet over medium-high heat and add the corn kernels. Cook them until they are slightly charred, about 5 to 7 minutes, stirring occasionally.
    • In a large bowl, combine the roasted corn, mayonnaise, lime juice, chili powder, salt, and pepper. Mix until all the ingredients are well combined.
