Creamy Chicken Orzo

  • 1 cup heavy cream
  • 1/2 cup Parmesan cheese, grated
  • 2 tbsp butter
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes
  • Zest of 1 lemon
  • Salt and black pepper to taste

 

For garnish:

  • Fresh basil leaves
  • Extra Parmesan
  • Cracked black pepper
  • Lemon wedges

Instructions

  1. Season diced chicken with salt and pepper.

  2. Heat olive oil in large skillet over medium-high heat.

  3. Cook chicken until golden, about 6-7 minutes. Remove and set aside.

  4. In same pan, melt butter and sauté onion until translucent.

  5. Add garlic, thyme, oregano, and red pepper flakes.

  6. Stir in orzo, toasting lightly for 2 minutes.

  7. Pour in chicken broth, bring to simmer.

  8. Cook orzo, stirring occasionally, until most liquid is absorbed.

  9. Add heavy cream and Parmesan, stirring until creamy.

  10. Return chicken to pan, add spinach and tomatoes.

  11. Stir in lemon zest and adjust seasonings.

  12. Serve hot with fresh garnishes.
