Ingredients

 

  • 12 large jalapeño peppers
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 12 slices bacon, cut in half lengthwise
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh cilantro
  • 1 tsp smoked paprika
  • 1/2 tsp onion powder
  • 1/4 tsp ground cumin
  • Salt and black pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

  2. Cut jalapeños in half lengthwise; remove seeds and membranes.

  3. In a bowl, mix cream cheese, cheddar, garlic, cilantro, paprika, onion powder, cumin, salt, and pepper.

  4. Fill each jalapeño half with the cheese mixture.

  5. Wrap each stuffed jalapeño with a half slice of bacon.

  6. Arrange poppers on the prepared baking sheet.

  7. Brush poppers lightly with olive oil.

  8. Bake for 20-25 minutes, until bacon is crispy and jalapeños are tender.

  9. For extra crispiness, broil for 1-2 minutes at the end.

  10. Let cool for 5 minutes before serving.
