  • Marzano whole peeled tomatoes
  • 1/4 cup fresh basil leaves, torn
  • 1 tsp sugar
  • Salt and freshly ground black pepper to taste
  • 1/4 cup grated Parmesan cheese, plus more for serving
  • 2 tbsp unsalted butter

Instructions

  1. For the gnocchi, boil potatoes until tender. Drain, peel, and mash while still hot.

  2. On a clean surface, make a mound with the mashed potatoes. Create a well in the center.

  3. Add flour, egg, salt, and pepper to the well.

  4. Gently knead until a soft dough forms.

  5. Divide dough into 4 parts. Roll each part into a rope about 1/2 inch thick.

  6. Cut ropes into 1-inch pieces. Press each piece with a fork to create ridges.

  7. Bring a large pot of salted water to a boil.

  8. For the sauce, heat olive oil in a large skillet over medium heat.

  9. Add minced garlic and cook until fragrant, about 1 minute.

  10. Crush tomatoes by hand and add to the skillet with their juices.

  11. Add torn basil, sugar, salt, and pepper. Simmer for 20 minutes.

  12. Cook gnocchi in batches in the boiling water until they float to the surface (2-3 minutes).

  13. Remove gnocchi with a slotted spoon and add directly to the sauce.

  14. Gently toss gnocchi with the sauce, adding Parmesan and butter.

  15. Cook for an additional 1-2 minutes until gnocchi are coated and sauce is creamy.

  16. Serve hot, garnished with additional Parmesan and fresh basil leaves.
