Tropical Papaya Salad

Papayas are an excellent source of vitamin C, which helps boost the immune system and promotes healthy skin. They also contain digestive enzymes like papain, which can aid in breaking down proteins and easing digestion.

Ingredients

 

  • 1 medium ripe papaya, peeled and julienned
  • 1 cucumber, julienned
  • 1 small red onion, thinly sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup roasted peanuts, roughly chopped
  • 2 tbsp fresh lime juice
  • 1 tbsp fish sauce
  • 1 tbsp honey
  • 1 clove garlic, minced
  • 1 small red chili, seeded and finely chopped (optional)
  • Fresh mint and cilantro leaves for garnish

 

Instructions

  1. In a large bowl, combine the julienned papaya, cucumber, red onion, and cherry tomatoes.

  2. In a small bowl, whisk together the lime juice, fish sauce, honey, minced garlic, and chopped red chili (if using) to create the dressing.

  3. Pour the dressing over the papaya mixture and toss gently to coat the ingredients evenly.

  4. Transfer the salad to a serving platter and sprinkle the chopped peanuts over the top.

  5. Garnish with fresh mint and cilantro leaves.

  6. Serve the papaya salad immediately as a refreshing side dish or light lunch.
