Fluffy Homemade Pancakes

By making pancakes at home, you have control over the ingredients and can opt for healthier choices, such as whole wheat flour or adding fresh fruit to the batter for extra nutrients and fiber.

Ingredients

 

  • 1 1/2 cups all-purpose flour
  • 3 1/2 tsp baking powder
  • 1 tsp salt
  • 1 tbsp granulated sugar
  • 1 1/4 cups milk
  • 1 egg
  • 3 tbsp unsalted butter, melted
  • 1 tsp vanilla extract (optional)

 

Instructions

  1. In a large mixing bowl, whisk together the flour, baking powder, salt, and sugar.

  2. In a separate bowl, combine the milk, egg, melted butter, and vanilla extract (if using). Whisk until well combined.

  3. Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix, as this can lead to tough pancakes.

  4. Heat a non-stick skillet or griddle over medium heat. Grease lightly with butter or cooking spray.

  5. Using a 1/4 cup measuring cup, scoop the batter onto the skillet or griddle, leaving space between each pancake for spreading.

  6. Cook the pancakes for about 2-3 minutes, or until bubbles form on the surface and the edges start to look dry. Flip the pancakes and cook for an additional 1-2 minutes on the other side, or until golden brown.

  7. Repeat with the remaining batter, greasing the skillet or griddle as needed.

  8. Serve the pancakes warm with your favorite toppings, such as butter, maple syrup, fresh berries, or whipped cream.
