Vibrant Berry Salad

Healthy Fact of the Day

This vibrant salad is a nutritional powerhouse, featuring a variety of fresh berries that are rich in vitamins, antioxidants, and fiber. The mixed greens provide additional vitamins and minerals, while the feta cheese and almonds offer a boost of protein and healthy fats.

Ingredients

 

  • 5 oz mixed greens (arugula, spinach, or your favorite blend)
  • 1 cup fresh strawberries, sliced
  • 1 cup fresh blueberries
  • 1/2 cup crumbled feta cheese
  • 1/4 cup sliced almonds
  • 2 tablespoons mint leaves, chopped

For the Vinaigrette: 

  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

 

Instructions

 

  1. In a large salad bowl, combine the mixed greens, sliced strawberries, blueberries, crumbled feta cheese, sliced almonds, and chopped mint leaves.

  2. In a small bowl or jar with a tight-fitting lid, prepare the vinaigrette by whisking together (or shaking) the olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper until well combined.

  3. Drizzle the desired amount of vinaigrette over the salad and gently toss to coat the ingredients evenly.

  4. Serve the summer berry salad immediately, while the greens are fresh and crisp.

Enjoy this refreshing and flavorful berry salad as a light main course or as an accompaniment to your favorite grilled meats or fish.
