Healthy Fact of the Day

Sweet potatoes are an excellent source of fiber, vitamins A and C, and potassium. Baking them into crispy fries with just a touch of olive oil and spices makes for a nutritious and delicious alternative to traditional French fries.

Ingredients

  • 3 large sweet potatoes, cut into 1/4-inch thick fries
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper.

  2. In a large bowl, toss the cut sweet potato fries with olive oil, paprika, garlic powder, salt, and black pepper until evenly coated.

  3. Spread the seasoned fries in a single layer on the prepared baking sheet, making sure not to overcrowd them.

  4. Bake for 20 minutes, then flip the fries with a spatula and bake for an additional 15-20 minutes, or until they are crispy and lightly browned.

  5. Remove the fries from the oven and let them cool slightly.

  6. Garnish with chopped fresh parsley if desired.
