- 2 cups old-fashioned oats
- 1 cup unsweetened applesauce
- 2 ripe bananas, mashed
- 2 large eggs
- 1/4 cup honey or maple syrup
- 1/4 cup coconut oil, melted

- 1/2 teaspoon baking soda

- 1 cup diced apples (any variety)

Instructions

Preheat the oven to 350°F (175°C). Line a muffin tin with paper liners.

In a blender or food processor, blend the old-fashioned oats until they reach a flour-like consistency.

In a large mixing bowl, combine oat flour, applesauce, mashed bananas, eggs, honey or maple syrup, melted coconut oil, vanilla extract, ground cinnamon, baking powder, baking soda, and salt. Mix until well combined.
