Ingredients
For the Rib Roast:
- 1 bone-in prime rib roast (about 4-5 pounds)
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- 1 tablespoon Dijon mustard
- 1 tablespoon Worcestershire sauce
- Salt and black pepper to taste.
For the Au Jus:
- 2 cups beef broth
- 1/2 cup red wine
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- Salt and black pepper to taste
Instructions
- Preheat your oven to 450°F (230°C).
- In a small bowl, mix together olive oil, minced garlic, chopped rosemary, chopped thyme, Dijon mustard, Worcestershire sauce, salt, and black pepper to create the herb crust.
- Pat the prime rib roast dry with paper towels.
- Rub the herb crust mixture evenly over the entire surface of the prime rib.
- Place the prime rib, fat side up, on a rack in a roasting pan.
- Roast in the preheated oven for 20 minutes to sear the meat.
- Reduce the oven temperature to 325°F (165°C) and continue roasting for about 15-20 minutes per pound for medium-rare, or until the internal temperature reaches your desired level of doneness.
- While the prime rib is roasting, prepare the au jus. In a saucepan, combine beef broth and red wine. Bring to a simmer.
- In a separate pan, melt butter over medium heat. Whisk in flour to create a roux.
- Gradually whisk the roux into the simmering broth mixture until the au jus thickens. Season with salt and black pepper.
- Once the prime rib is done, let it rest for 15-20 minutes before carving.
- Serve the Herb-Crusted Prime Rib Roast slices with a drizzle of au jus.
