Greek Salad with Homemade Tzatziki Dressing

Ingredients

 

For the Tzatziki Dressing:

  • 1 cup Greek yogurt
  • 1 cucumber, grated and squeezed to remove excess moisture
  • 2 cloves garlic, minced
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon lemon juice
  • Salt and black pepper to taste

 

For the Greek Salad:

  • 4 cups chopped romaine lettuce
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh parsley leaves, chopped
  • 1/4 cup fresh mint leaves, chopped (optional)
  • Extra virgin olive oil for drizzling
  • Lemon wedges for serving (optional)

 

 

Instructions

 

For the Tzatziki Dressing:

  1. In a bowl, combine Greek yogurt, grated cucumber, minced garlic, chopped fresh dill, lemon juice, salt, and black pepper. Mix well.
  2. Taste the dressing and adjust the seasoning or lemon juice as needed. Refrigerate until ready to use.

 

For the Greek Salad:

  1. In a large salad bowl, layer the chopped romaine lettuce.
  2. Arrange the cherry tomatoes, diced cucumber, thinly sliced red onion, Kalamata olives, crumbled feta cheese, fresh parsley leaves, and fresh mint leaves (if using) over the lettuce.
  3. Drizzle extra virgin olive oil over the salad and season lightly with salt and black pepper.
  4. Toss the Greek Salad gently to combine the ingredients.
  5. Serve your Greek Salad with Homemade Tzatziki Dressing, and offer lemon wedges on the side for an extra zesty touch, if desired.
