    Ingredients

    • 4 slices bread

    • 1 cup ricotta cheese

    • 3 tablespoons sugar

    • 1 teaspoon vanilla extract

    • 1 teaspoon cinnamon

    • 2 eggs

    • 0.5 cup heavy cream

    • 1 tablespoon butter

    • 0.25 cup mini chocolate chips

    • 0.25 cup chopped pistachios

    • 1 tablespoon powdered sugar

    Directions

    • In a medium bowl, combine ricotta cheese, sugar, and vanilla extract until smooth, and set aside for the filling.
    • In a shallow dish, whisk together eggs, heavy cream, and cinnamon to create the egg mixture for coating.
    • Dip each slice of bread in the egg mixture, ensuring both sides are evenly coated.
    • Heat butter in a large skillet over medium heat until it melts and starts to bubble slightly.
    • Place the coated bread slices into the skillet and cook for 3-4 minutes on each side until golden brown.
    • Remove the cooked French toast from the skillet and let them cool slightly on a plate.
    • Spread the ricotta mixture onto one side of each piece of toast and sprinkle with mini chocolate chips and pistachios.
    • Top each piece with another slice to form a sandwich and dust with powdered sugar before serving.
