Zucchini Noodle Caprese Salad

Ingredients

 

  • 3 large zucchinis, spiralized or julienned
  • 1 pint cherry tomatoes, halved
  • 8 ounces fresh mozzarella cheese, cubed
  • 1/4 cup fresh basil leaves, thinly sliced
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1 clove garlic, minced
  • Salt and pepper to taste

 

Instructions

 

  1. Using a spiralizer or julienne peeler, create zucchini noodles from the zucchinis. Place the zucchini noodles in a large bowl.

  2. Add the halved cherry tomatoes, cubed mozzarella cheese, and sliced basil to the bowl with the zucchini noodles.

  3. In a small bowl, whisk together the olive oil, balsamic vinegar, minced garlic, and a pinch of salt and pepper.

  4. Pour the dressing over the zucchini noodle mixture and gently toss to combine.

  5. Let the salad marinate for 10-15 minutes at room temperature before serving, allowing the flavors to blend.
