Zesty Grilled Lemon Herb Chicken Skewers

Chicken is an excellent source of lean protein, while the fresh herbs and lemon provide a burst of flavor and antioxidants. Grilling the skewers helps retain the nutrients and keeps the dish low in added fats or calories.

Ingredients

 

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1/4 cup olive oil
  • Zest and juice of 1 lemon
  • 2 cloves garlic, minced
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons chopped fresh basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Wooden skewers, soaked in water for 30 minutes

 

Instructions

 

  1. In a large bowl, combine the cubed chicken, olive oil, lemon zest, lemon juice, minced garlic, chopped parsley, chopped basil, dried oregano, salt, and black pepper. Toss to coat the chicken evenly with the marinade.

  2. Cover the bowl with plastic wrap and marinate in the refrigerator for at least 30 minutes, or up to 2 hours.

  3. Preheat your grill or grill pan to medium-high heat.

  4. Thread the marinated chicken cubes onto the soaked wooden skewers, leaving a small space between each piece.

  5. Grill the chicken skewers for 8-10 minutes, turning occasionally, until the chicken is cooked through and no longer pink in the center.

  6. Remove the skewers from the grill and let them rest for 5 minutes.

  7. Serve the lemon herb chicken skewers hot, garnished with extra chopped parsley and lemon wedges, if desired.
