Shepherd’s Pie

Baked Potato Shepherd's Pie can be a well-balanced and comforting dish with lean meat and plenty of vegetables.

Ingredients

 

For the Mashed Potatoes:

  • 4 large potatoes, peeled and cut into chunks
  • 1/4 cup milk
  • 2 tablespoons butter
  • Salt and black pepper to taste

 

For the Filling:

  • 1 pound ground beef or lamb
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 1 cup frozen peas
  • 1 cup corn kernels (fresh or frozen)
  • 2 tablespoons all-purpose flour
  • 1 cup beef or vegetable broth
  • 2 tablespoons tomato paste
  • 1 teaspoon Worcestershire sauce (optional)
  • Salt and black pepper to taste
  • Chopped fresh parsley for garnish (optional)

 

Instructions

 

For the Mashed Potatoes:

  1. Place the potato chunks in a large pot of salted water. Bring to a boil and cook until the potatoes are tender, about 15-20 minutes.
  2. Drain the potatoes and return them to the pot.
  3. Add the milk and butter to the pot and mash the potatoes until they are smooth and creamy. Season with salt and black pepper to taste.

 

For the Filling:

  1. In a large skillet, cook the ground beef or lamb over medium heat until it’s browned and cooked through. Drain any excess fat.
  2. Add the chopped onion and cook for about 3-4 minutes until it’s softened.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add the diced carrots, frozen peas, and corn kernels. Cook for another 5-7 minutes until the vegetables are tender.
  5. Sprinkle the all-purpose flour over the meat and vegetables and stir to combine.
  6. Pour in the beef or vegetable broth, tomato paste, and Worcestershire sauce (if using). Cook for a few minutes until the mixture thickens.
  7. Season with salt and black pepper to taste.

 

Assembly:

  1. Preheat your oven to 375°F (190°C).
  2. In a baking dish, spread the meat and vegetable mixture as the bottom layer.
  3. Spoon the mashed potatoes on top and spread them to cover the filling.
  4. Use a fork to create some texture on the surface of the mashed potatoes.
  5. Place the dish in the preheated oven and bake for about 25-30 minutes or until the top is golden brown.
  6. Garnish with chopped fresh parsley if desired.
  7. Serve your Baked Potato Shepherd’s Pie hot and enjoy this classic comfort food.
