Savory Breakfast Lasagna

Ingredients

 

  • 12 lasagna noodles, cooked
  • 12 eggs, scrambled
  • 1 lb breakfast sausage, cooked and crumbled
  • 2 cups shredded cheddar cheese
  • 2 cups ricotta cheese
  • 1 cup milk
  • 1/4 cup chopped fresh chives
  • 1/4 cup chopped fresh parsley
  • 2 cups hash browns, cooked
  • Salt and pepper to taste

 

For the béchamel sauce:

  • 4 tbsp butter
  • 4 tbsp flour
  • 2 cups milk
  • 1/4 tsp nutmeg
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).

  2. Make béchamel sauce: Melt butter, whisk in flour, gradually add milk, simmer until thickened. Season with nutmeg, salt, and pepper.

  3. In a bowl, mix ricotta, milk, chives, and parsley.

  4. Layer in a 9×13 baking dish: lasagna noodles, scrambled eggs, sausage, hash browns, ricotta mixture, cheddar cheese.

  5. Repeat layers.

  6. Top with final layer of noodles and pour béchamel sauce over.

  7. Sprinkle remaining cheddar on top.

  8. Bake for 30-35 minutes until golden and bubbly.

  9. Let rest for 10 minutes before serving.
