One-Pan Mediterranean Baked Cod

One-Pan Mediterranean Baked Cod is a wholesome and heart-healthy dish, featuring lean cod fish paired with vibrant Mediterranean flavors.

Ingredients

 

  • 4 cod fillets (about 6 oz each)
  • 1 pint cherry tomatoes, halved
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/4 cup capers, drained
  • 4 cloves garlic, minced
  • 1 lemon, sliced
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste
  • Fresh parsley for garnish
  • Cooked quinoa or couscous for serving

Instructions

 

  1. Preheat your oven to 400°F (200°C).

  2. In a large baking dish, place the cod fillets.

  3. Surround the cod with halved cherry tomatoes, sliced Kalamata olives, capers, minced garlic, and lemon slices.

  4. Drizzle extra virgin olive oil over the top.

  5. Sprinkle dried oregano, dried thyme, salt, and black pepper evenly over the fish and vegetables.

  6. Gently toss the vegetables to coat them in the olive oil and seasoning.

  7. Bake in the preheated oven for 15-20 minutes or until the cod is cooked through and flakes easily with a fork.

  8. Remove from the oven and let it cool for a few minutes.

  9. Serve the One-Pan Mediterranean Baked Cod over cooked quinoa or couscous.

  10. Garnish with fresh parsley.
