Lentil and Vegetable Stew with Turmeric

Ingredients

 

  • 1 cup dry brown or green lentils, rinsed
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes, undrained
  • 1 can (14 oz) vegetable broth
  • 4 cups water
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 1 cup kale or spinach, chopped
  • Fresh parsley, chopped, for garnish

Instructions

 

  1. In a large pot, combine dry lentils, chopped onion, diced carrots, diced celery, minced garlic, diced tomatoes with their juice, vegetable broth, and water.

  2. Stir in ground turmeric, ground cumin, smoked paprika, salt, and black pepper.

  3. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 25-30 minutes or until the lentils and vegetables are tender.

  4. Add chopped kale or spinach to the pot and stir until wilted.

  5. Adjust seasoning if needed.

  6. Ladle the Lentil and Vegetable Stew into bowls.

  7. Garnish with chopped fresh parsley.
