Honey Glazed Rhubarb Chicken

Rhubarb is a good source of fiber, vitamin C, and vitamin K. When combined with the protein from chicken and the natural sweetness of honey, this dish provides a balanced and nutritious meal.

Ingredients

 

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 pound rhubarb, sliced into 1-inch pieces
  • 1/2 cup honey
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon dried thyme
  • 2 cloves garlic, minced

 

Instructions

 

  1. Season the chicken breasts with salt and pepper.

  2. In a large skillet, heat the olive oil over medium-high heat.

  3. Cook the chicken breasts for 4-5 minutes per side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside, keeping it warm.

  4. In the same skillet, add the sliced rhubarb, honey, apple cider vinegar, Dijon mustard, dried thyme, and minced garlic.

  5. Cook for 5-7 minutes, stirring occasionally, until the rhubarb is tender and the sauce has thickened.

  6. Return the cooked chicken breasts to the skillet and coat them with the rhubarb honey sauce.

  7. Serve the honey glazed rhubarb chicken hot, garnished with additional fresh thyme or parsley, if desired.
