Easy Pesto Ravioli

Easy Pesto Ravioli is a quick and delicious meal that combines the flavors of fresh pesto and tender cheese-filled ravioli.

Ingredients

 

  • 1 pound cheese-filled ravioli
  • 1 cup fresh basil leaves, packed
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup pine nuts
  • 2 cloves garlic, minced
  • 1/2 cup extra-virgin olive oil
  • Salt and black pepper to taste
  • Cherry tomatoes for garnish (optional)
  • Extra grated Parmesan for serving (optional)

 

Instructions

 

  1. Cook the cheese-filled ravioli according to the package instructions. Drain and set aside.

  2. In a food processor, combine the fresh basil, grated Parmesan cheese, pine nuts, and minced garlic.

  3. Pulse the ingredients until finely chopped.

  4. With the food processor running, slowly pour in the extra-virgin olive oil until the mixture forms a smooth pesto.

  5. Season the pesto with salt and black pepper to taste. Adjust the consistency with more olive oil if needed.

  6. Toss the cooked ravioli with the freshly made pesto until evenly coated.

  7. Garnish with cherry tomatoes and extra grated Parmesan if desired.

  8. Serve your Easy Pesto Ravioli hot.
