Creamy Tuscan Chicken

Creamy Tuscan chicken is a delightful dish featuring tender chicken in a luscious, herb-infused cream sauce.

Ingredients

 

  • 4 boneless, skinless chicken breasts
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup baby spinach
  • 1 cup sun-dried tomatoes, sliced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried Italian herbs (rosemary, thyme, oregano)
  • Crushed red pepper flakes for a hint of heat (optional)
  • Fresh basil for garnish (optional)
  • Cooked pasta or rice for serving

 

Instructions

 

  1. Season the chicken breasts with salt and black pepper.
  2. In a large skillet, heat the olive oil over medium-high heat.
  3. Add the seasoned chicken breasts to the skillet and sear on both sides until golden brown and cooked through. Remove the chicken from the skillet and set it aside.
  4. In the same skillet, add the minced garlic and cook for about 1 minute until fragrant.
  5. Add the cherry tomatoes, baby spinach, and sun-dried tomatoes to the skillet. Cook for about 2-3 minutes until the tomatoes are softened and the spinach is wilted.
  6. Pour in the heavy cream and grated Parmesan cheese. Stir to combine and allow the sauce to thicken.
  7. Return the cooked chicken to the skillet and spoon the creamy sauce over the chicken.
  8. Sprinkle the dried Italian herbs over the chicken and sauce. Add crushed red pepper flakes for a bit of heat if desired.
  9. Cook for an additional 2-3 minutes, allowing the chicken to heat through.
  10. Serve your Creamy Tuscan Chicken over cooked pasta or rice.
  11. Garnish with fresh basil if desired.
