Creamy Broccoli Cheddar Soup

Ingredients

 

  • 4 tablespoons unsalted butter
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 2 cups chicken or vegetable broth
  • 2 cups milk
  • 4 cups broccoli florets, chopped into bite-sized pieces
  • 2 carrots, peeled and grated
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 2 cups shredded cheddar cheese

 

Instructions

 

  1. In a large pot or Dutch oven, melt the butter over medium heat.

  2. Add the diced onion and minced garlic. Cook for 2-3 minutes until fragrant and the onion is translucent.

  3. Whisk in the flour and cook for 1 minute to create a roux.

  4. Gradually pour in the chicken or vegetable broth and milk, whisking constantly to prevent lumps from forming.

  5. Add the chopped broccoli florets, grated carrots, salt, black pepper, and nutmeg. Stir well.

  6. Bring the soup to a simmer and cook for 15-20 minutes, or until the broccoli and carrots are tender.

  7. Remove the pot from heat and stir in the shredded cheddar cheese until it is melted and the soup is smooth and creamy.

  8. Taste and adjust seasoning with salt and pepper if needed.

  9. Serve the broccoli cheddar soup hot, garnished with extra shredded cheddar or croutons if desired.
